What is the difference between independent living and assisted living?

Okay, I feel dumb asking this, but can someone explain the difference between independent and assisted living to me please. We're starting to look at options for Mom and I'm getting overwhelmed by all the terminology. I want to make sure we choose the best option for her needs.
